Simple onion soup
I want to share a very simple but original recipe for onion soup. They say that it was first prepared in France for King Louis himself, I don’t know which one. But this soup was prepared due to the lack of assortment of products. There was only a piece of butter, champagne and... onions. It turns out that you can prepare something from such ingredients. Not from an ax, of course, but still!
I cook it only with chicken broth. To my taste, it’s tastier and more satisfying, and the children eat it with pleasure (if desired, you can replace it with a vegetable one). In my family this is considered a holiday dish. Despite its simplicity, I often don’t cook it. Probably because you can’t cook it for several days, like borscht. Only eat this soup fresh.

- 1. Onions - 100 g.
- 2. Butter - 1 tablespoon.
- 3. Olive oil - 2 tablespoons.
- 4. Wheat flour - 1 teaspoon.
- 5. White bread - 2 slices.
- 6. Hard cheese - 50 g.
- 7. Ground black pepper - to taste.
Making delicious onion soup
Cut the onion into half rings, not too thin. Approximately 2-3 mm. Otherwise, it will simply dissolve in the broth.
Place the onion in a frying pan and fry in a mixture of olive and butter.Stir continuously over high heat for 2-3 minutes, then leave on low, cover with a lid and simmer for 20 minutes.
While the onions are cooking, you can toast the croutons. Cut the bread into squares and fry in butter until browned. You can eat soup without them, but it won’t be the same...
Grind the cheese on a coarse grater. I don’t recommend processed cheese; it’s better to choose Dutch, Eden, Russian or any hard varieties.
Add flour to the ripened onion, which should turn brownish in color, and stir quickly to avoid lumps. The flour will make the broth a little thicker. But be careful not to overdo it, otherwise you will end up with onion porridge and not soup.
Combine broth and onion. Let it simmer over low heat for 5 minutes. Our soup is ready! It's good to add a little ground black pepper; it goes well with the onion flavor. We do not add greens; they interrupt the spicy taste of the soup.
And before pouring into plates, let the dish cool a little and brew. Then sprinkle with grated cheese and don’t forget the croutons. You will get 3 servings. Bon appetit!
