Just put the meat in a bottle and get sausage, it couldn’t be simpler
A rather unpleasant moment when preparing homemade brawn is the preparation and filling of the intestines or stomach. It is much easier to use an ordinary plastic bottle instead. The taste of the brawn will be the same, and it will take less time to cook.
Ingredients:
- pork knuckles – 2 pcs. (3.5 kg);
- onion – 1 pc.;
- bay leaf – 2-3 pcs.;
- black pepper – 4-6 peas;
- salt – 2 tbsp;
- garlic – 10 cloves.
The process of preparing brawn in a bottle
The pork legs need to be cut into manageable pieces, placed in a pan and filled with water.
After an hour, the water is changed, and a whole onion, bay leaves, a couple of peppercorns and salt are added on top. The pan is set to minimum heat. You need to cook the shank for 3.5-4 hours.
The cooked meat is removed from the broth. After cooling, it is torn from the bones with your fingers. It needs to be divided into medium and large pieces.
Garlic is squeezed onto them and a ladle of broth is poured out.
Then everything is mixed and transferred to a plastic bottle with the neck cut off.
You will need 2 bottles. You can use a cut packet of kefir or juice instead.
Periodically, the meat mass is compacted with a spoon. Leave a little space on top to add a couple of spoons of broth. After this, the bottle is wrapped in cling film and sent to the refrigerator. After 6-8 hours the brawn is ready.
All that remains is to cut the bottle lengthwise and take it out.
Due to the broth, the brawn holds up well even without intestines or stomach.
