Delicious and inexpensive homemade sausage made from chicken thighs and minced pork
You can diversify the taste and reduce the cost of sausage, without compromising the taste, by using chicken thighs. This is the juiciest and meatiest part of the chicken, so homemade sausage will not be dry, and due to the fact that the chicken is cut into pieces, the minced meat in the casing will not come together in one lump.

Ingredients excluding salt:
Once the net weight of the meat mixture (without chicken bones) is known, you can calculate the salt consumption - 18 g of salt is used for 1 kg of minced meat.
Preparation will take an hour and a half:
1. Cut out the bones from the thighs. Cut the meat, including the chicken skin, into medium cubes.
2. Place chicken and ground pork together. Determine weight - 1390 g.
3. Based on the total weight, the amount of salt is 25 g.
4. Add it to the meat along with spices and squeezed garlic.Mix everything thoroughly.
5. Place the intestine on a special attachment, tie the end with a strong thread and loosely stuff the intestine, squeezing the minced meat through a meat grinder (first remove the knife and grid from the meat grinder).
6. Tie the sausage into a ring and pull it in the middle again. Using a gypsy needle, make punctures along the entire length of the workpiece.
7. Place the sausage rings in boiling water.
8. After 15 min. boil, remove them from the pan.
9. Fry the sausage in lard or vegetable oil until nicely crusted.
All-meat, incredibly tasty and aromatic homemade sausage, inexpensive in cost, is ready. Both hot and cold, this is a wonderful alternative to store-bought analogues (although nothing comes close in composition).
