Chinese fried potatoes when you're tired of banal potatoes
It would seem that fried potatoes can surprise you. However, it can be prepared in such a way that it will be completely different from the dish familiar from childhood. Try Chinese fried potatoes.
Ingredients for 2 servings:
- large potatoes – 2 pcs.;
- red and green bell pepper – 1 half each;
- garlic – 4 cloves;
- red dried chili pepper – 5 pcs.;
- green onions – 5 pods;
- vinegar - 3 tbsp;
- salt – 1 tbsp;
- sugar – 0.5 tbsp;
- ground black pepper;
- fresh ginger.
Cooking process
The potatoes are first cut into thin slices, then into very small strips. Next, it is washed in cold water to remove starch.
The straw is poured into a pan, washed and filled with water. Add 3 tbsp on top. vinegar and leave the potatoes to soak for 20 minutes.
While the potatoes are soaking from starch, you need to cut the ginger root into strips for oil.
Then the garlic is cut into thin slices and the onion pods are chopped.
Red and green peppers are cut into strips. Before this, the inner white parts are removed, as they give off bitterness.
After 20 minutes, the potatoes are discarded in a colander.
While it is draining, you need to boil starch-free water, then boil the potatoes in it for 30 seconds. It is taken out and dried again in a colander.
Vegetable oil is poured into a frying pan and ginger is added.
It needs to be sautéed for 1 minute, then removed. The result will be a fragrant oil. Next, the chili pepper is transferred to the frying pan and sauteed as well. After a minute, garlic is added. It is fried until golden brown.
Green onions are sprinkled on top, mixed with oil and potatoes are added.
Potatoes are fried over high heat with constant stirring. After a minute, bell pepper, salt, sugar and other spices are added.
After this, the dish is fried for another 5-7 minutes with constant stirring at maximum heat.
