Zucchini pizza in a frying pan - light, tasty, fast
Light, but at the same time satisfying pizza, the filling of which can vary from sausage, meat, mushrooms to simply tomatoes and cheese, is made on zucchini dough using a minimal amount of flour. The zucchini base fried in a frying pan resembles a vegetable casserole or pancakes, which harmonizes perfectly with the classic pizza filling.
Ingredients for a frying pan d = 28 cm:
- a) zucchini - 350 g,
- b) flour - 60 g,
- c) sour cream - 35 g,
- d) egg - 1 pc.,
- e) small tomatoes - 2 pcs.,
- e) mushrooms fried with onions - 120 g,
- g) cheese - 90 g,
- h) basil - 4 g,
- i) garlic - 2 cloves,
- j) parsley - a bunch.
It will take about 15 minutes to prepare:
1. Grate the zucchini without removing the young peel. Season generously with salt and set aside for now.
2. Meanwhile, start filling the pizza. Cut the tomatoes into slices.
3. Chop the garlic with a knife.
4. Grate the cheese.
5. During this time, the zucchini released juice. Squeeze them with your hands and transfer to a clean bowl.
6. Add egg and sour cream to the zucchini shavings.
7. Add chopped parsley and flour. Do not add more salt - there is enough left in the zucchini. Mix everything.
8.Lightly oil the pan and pour in the zucchini batter. Distribute it evenly over the entire diameter. Simmer the vegetable pizza base under the lid for 10 minutes.
9. Then turn the zucchini pancake onto a lid or large plate.
10. Push it with the unfried side back into the frying pan, sprinkle with garlic and basil.
11. Sprinkle with half of the prepared cheese.
12. Place mushrooms.
13. Cover them completely with tomato slices.
14. They, in turn, are covered with the remaining cheese.
15. Cover the zucchini pizza for a couple of minutes until the cheese is completely melted. You can replace this stage with the oven, slightly browning the top layer there.
Zucchini-based pizza is very juicy and has a balanced taste that remains pleasant even after cooling.
